Apple Muffins
Last week I tried baking my standard Cocoa Banana Loaf, but in muffin form. They were very unsuccessful. I’m not entirely sure why, but it might have something to do with the fact that I had forgotten that we had no baking powder, and therefore made them without it.
This week I decided to try my hand at muffin baking again, this time using Smitten Kitchen’s recipe for Whole Wheat Apple Muffins. As always, hers look much better then mine. Not sure how I managed to burn them when I had them in for the minimum time recommended. Must speak to my ‘amazing’ baking abilities.
I’m just hoping my grandparents will like them, because I can’t eat 12 on my own.
- update – They are delicious! The only thing that burnt was the brown sugar that I didn’t skimp on, as per the recipe. Next time, less brown sugar on top.
